Simple Pickled Cucumber
This simple Scandinavian favourite is a perfect pairing for smoked or steamed fish dishes, as well as a quick tangy compliment to spicy stir-fry’s.
Ingredients
1 Cucumber
2 tsp fine sea salt
1/4 cup caster sugar
1/4 cup white wine vinegar
1 tbsp whole peppercorns
Method
Slice or cube the cucumber as desired.
Place sugar, salt, vinegar and peppercorns in a bowl and stir to combine.
Add the cucumber and ensure it is completely submerged in the liquid.
Cover and place in the fridge. Leave to pickle for at least one hour.
Can be made in advance - boil a mason jar in a large pan for 5 minutes, to ensure it is completely clean, remove from water and set aside to cool. Once completely cooled, place cucumbers and pickling liquid in the mason jar, close tightly with lid and place in the fridge to store.
