Coconut Mango Chia Pudding
A simple make ahead breakfast or healthy dessert. The creamy coconut milk chia pudding is topped with a mango and lime coulis, and finished with coconut flakes for added crunch.
Ingredients
3 tablespoons chia seeds
100g natural yoghurt
1 tablespoon agave nectar
300g coconut milk
1/4 teaspoon vanilla extract
3 tablespoons coconut flakes
1 ripe mango
Method
In a medium bowl, mix yoghurt and coconut milk thoroughly. Add chia seeds, stir fully to combine, then refrigerate for 15 minutes.
Remove bowl from fridge, stir mixture thoroughly again, then divide into 4 ramequins. Refrigerate overnight.
When ready to serve, slice mango into small pieces, and blitz in food processor with the juice of half a lime.
Top coconut pudding with mango coulis, sprinkle with coconut flakes, and serve.
