Salted Caramel Popcorn
A delicious snack at any time or day, this salted caramel popcorn is easy, quick, and a perfect balance of salty & sweet.
Ingredients
2 tbsp vegetable oil
1/2 cup popcorn kernels
3/4 tsp baking soda
1 1/2 cups sugar
1/2 cup water
25g salted butter
Method
In a large heavy bottomed pan on medium heat, put the vegetable oil and corn kernels, stir them to coat the kernels with oil, and put the lid on the pan.
Shake the pan from time to time, always keeping the lid closed, until the corn starts to sizzle. When the corn begins to pop, shake the pan with the lid closed every 30 seconds or so. Take pan off the fire when there are 5 seconds between pops and all of the corn seems to have popped. This whole process should take about 5 minutes. Set popcorn aside to cool, with the lid off.
Once popcorn is cool, spread it evenly on a large baking tray
In a medium heavy bottomed pan, put water, sugar and butter. Stir lightly to combine, then put on stove on medium-low heat. Do not stir the mixture once it is on the heat. Allow mixture to melt and bubble without stirring, until it has combined and become an amber coloured caramel.
Take off heat, add baking soda (it will bubble up), and whisk until combined.
Carefully pour hot caramel on top of popcorn, and using a wooden spoon stir to coat all of the kernels.
Allow to sit and cool to room temperature. Once caramel has cooled and hardened, break popcorn chunks into smaller pieces and enjoy.
