Dried Citrus Slices

Slow oven dried citrus can be used in a variety of ways - as beautiful garnishes for cocktails, or dipped in chocolate as a bittersweet snack. Lemons, oranges, grapefruit or mandarins all work equally well.

Ingredients

  • Citrus fruit: use lemons, oranges, grapefruit, blood oranges or mandarins

Method

Finely slice the citrus slices with a mandolin or a very sharp knife.

Dab both sides of each slice with paper towel to remove excess liquid.

On a baking tray lines with parchment, lay the citrus slices about 1cm apart.

Pre-heat oven to 90ºc (fan)

Leave citrus in oven for 1.5 hours until dry and brittle.

Turn to other side and leave to fry for a further 30 minutes.

Remove from oven and allow to cool on parchment until fully cooled. Carefully remove from parchment and set on cooling rack for a further hour to fully harden.

Store in airtight container.
