Yuzu Gin Fizz

This zesty drink is the perfect light cocktail to ease you into the warmer Spring weather. Use lemon if Yuzu is hard to come by.

Ingredients

- 1 egg white
- 1 Tablespoon homemade Yuzu syrup (recipe from my Yuzu Tarte a couple weeks ago)
- 2 tablespoons lemon juice
- 3 tablespoons gin
- Soda water
- Ice cubes

Method

In a cocktail shaker, shawls the egg whites, gin, syrup and lemon juice for 10-15 seconds.

Fill shaker with ice cubes, then shake for a further 25-30 seconds.

Pour into glass, then top up with soda water.

Serve immediately with a slice of dried Yuzu or lemon.
